About Mansaf
Mansaf is more than a meal – it’s the national dish of Jordan, a symbol of hospitality and generosity. Traditionally served during weddings, religious celebrations, and large gatherings, it represents community and culture. The main ingredients are tender halal lamb, aromatic rice, and a rich Jameed (fermented yogurt) sauce, topped with toasted nuts.

The Ingredients
- 1.5 kg halal lamb shoulder
- 4 cups water or lamb stock
- 2 cups Jameed (or Greek yogurt + ½ cup water)
- 2 cups rice, rinsed
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 tsp turmeric
- 1 tsp allspice
- 1 tsp cinnamon
- Salt and pepper to taste
- ½ cup pine nuts or almonds, toasted
- Flatbread for serving
- Chopped parsley for garnish
Cooking Instructions
- In a large pot, combine lamb, water or stock, onions, garlic, turmeric, allspice, cinnamon, salt, and pepper. Bring to a boil, then reduce heat and simmer 1.5–2 hours until lamb is tender.
- Cook the rice separately until fluffy.
- Combine Jameed (or yogurt mix) with some of the lamb broth, heat gently while stirring until smooth.
- Layer flatbread on a serving platter, add rice, top with lamb, pour sauce over, and garnish with nuts and parsley.
- Serve hot and enjoy!
Optional Side: Yogurt & Cucumber Dip
A refreshing dip that perfectly complements the rich Mansaf:
- 1 cucumber, finely grated
- 1 cup Greek yogurt
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 2 tbsp fresh mint, chopped
- Salt and pepper to taste
Mix all ingredients, chill for 1 hour, and serve alongside Mansaf.
