The Ingredients

  • 1.5 kg halal lamb shoulder
  • 4 cups water or lamb stock
  • 2 cups Jameed (or Greek yogurt + ½ cup water)
  • 2 cups rice, rinsed
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 tsp turmeric
  • 1 tsp allspice
  • 1 tsp cinnamon
  • Salt and pepper to taste
  • ½ cup pine nuts or almonds, toasted
  • Flatbread for serving
  • Chopped parsley for garnish

Cooking Instructions

  1. In a large pot, combine lamb, water or stock, onions, garlic, turmeric, allspice, cinnamon, salt, and pepper. Bring to a boil, then reduce heat and simmer 1.5–2 hours until lamb is tender.
  2. Cook the rice separately until fluffy.
  3. Combine Jameed (or yogurt mix) with some of the lamb broth, heat gently while stirring until smooth.
  4. Layer flatbread on a serving platter, add rice, top with lamb, pour sauce over, and garnish with nuts and parsley.
  5. Serve hot and enjoy!

Optional Side: Yogurt & Cucumber Dip

A refreshing dip that perfectly complements the rich Mansaf:

  • 1 cucumber, finely grated
  • 1 cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 2 tbsp fresh mint, chopped
  • Salt and pepper to taste

Mix all ingredients, chill for 1 hour, and serve alongside Mansaf.
